Ingredients
16 oz cream cheese, softened
1 cup mixed olives, chopped
1 cup red bell peppers, chopped
2 tbsp fresh parsley, chopped
1 tbsp fresh rosemary, chopped
1 cup cheddar or provolone cheese cubes, chopped
1 clove garlic, minced
1/4 tsp salt
1/4 tsp black pepper
Instructions
1. Chop olives, red bell peppers, parsley, rosemary, and cheese cubes into small, even pieces.
2. Soften cream cheese at room temperature. In a mixing bowl add cream cheese, minced garlic, salt, and black pepper; beat until smooth.
3. Fold in olives, peppers, herbs, and cheese cubes with a spatula until evenly distributed.
4. Spoon mixture onto plastic wrap or parchment paper; shape into an 8–10 inch log. Wrap tightly and roll to smooth.
5. Refrigerate at least 2 hours until firm.
6. Unwrap, place on a serving board, garnish with extra herbs/peppers if desired, and serve with crackers or bread.
Notes
Chill well before slicing to get clean, neat cuts.
