Description

Festive Holiday Antipasto Cream Cheese Log is a make-ahead Christmas appetizer loaded with cream cheese, mixed olives, red peppers, fresh herbs, and cheddar or provolone. This easy antipasto cheese log is creamy, colorful, and perfect for holiday parties, family gatherings, and charcuterie boards. Serve with crackers, baguette slices, or veggies.


Ingredients

16 oz cream cheese, softened

1 cup mixed olives, chopped

1 cup red bell peppers, chopped

2 tbsp fresh parsley, chopped

1 tbsp fresh rosemary, chopped

1 cup cheddar or provolone cheese cubes, chopped

1 clove garlic, minced

1/4 tsp salt

1/4 tsp black pepper


Instructions

1. Chop olives, red bell peppers, parsley, rosemary, and cheese cubes into small, even pieces.

2. Soften cream cheese at room temperature. In a mixing bowl add cream cheese, minced garlic, salt, and black pepper; beat until smooth.

3. Fold in olives, peppers, herbs, and cheese cubes with a spatula until evenly distributed.

4. Spoon mixture onto plastic wrap or parchment paper; shape into an 8–10 inch log. Wrap tightly and roll to smooth.

5. Refrigerate at least 2 hours until firm.

6. Unwrap, place on a serving board, garnish with extra herbs/peppers if desired, and serve with crackers or bread.

Notes

Chill well before slicing to get clean, neat cuts.

Make it a day ahead for deeper, melded flavor.
