Ingredients
Chicken:
2 boneless, skinless chicken breasts
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp chili paste or sriracha
1 garlic clove, minced
1 tsp honey
Ramen:
2 packs ramen noodles (no seasoning)
4 cups chicken broth
1 cup unsweetened coconut milk
4 cloves garlic, minced
1 tbsp grated ginger
1 tbsp soy sauce
1 tbsp chili oil (plus more for garnish)
1 tbsp miso paste (optional)
1 tsp sugar
2 green onions, sliced
Salt and pepper to taste
Instructions
- Marinate chicken in soy sauce, sesame oil, chili paste, garlic, and honey for at least 30 minutes.
- Cook chicken in a skillet until fully cooked and charred. Slice and set aside.
- In a pot, sauté garlic and ginger. Add broth, coconut milk, soy sauce, chili oil, miso paste, and sugar. Simmer for 10 minutes.
- Cook noodles according to package directions. Drain.
- Assemble bowls with noodles, broth, chicken, chili oil drizzle, and green onions.
