Ingredients
250 grams fresh okra (bhindi)
2 tablespoons vegetable or mustard oil
1 teaspoon cumin seeds
1 medium onion, thinly sliced (optional)
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon garam masala
Salt to taste
1 tablespoon lemon juice (optional)
Instructions
1. Wash the okra thoroughly and pat it completely dry using a clean kitchen towel. Trim both ends and cut into 1/2-inch pieces.
2. Heat oil in a heavy-bottomed skillet over medium heat. Add cumin seeds and let them sizzle for about 30 seconds until fragrant.
3. If using onions, add them and sauté until golden brown to create a flavorful base.
4. Add chopped okra and stir-fry uncovered on medium-high heat for 10–12 minutes. Stir occasionally to prevent burning and maintain crispness.
5. Sprinkle turmeric powder, red chili powder, coriander powder, and salt. Mix well so the spices coat each piece evenly. Cook for another 2–3 minutes.
6. Turn off the heat, add garam masala, and drizzle lemon juice (if using). Toss gently and serve hot.
Notes
Always dry the okra completely before slicing to avoid sliminess during cooking.
Avoid covering the pan while cooking to help moisture evaporate.
Use a wide skillet to ensure even cooking and avoid overcrowding the pan.
