Ingredients

1 cup warm water

1 tablespoon granulated sugar

2 ¼ teaspoons active dry yeast

4 cups all-purpose flour

¾ cup whole milk (warm)

2 large eggs

1 teaspoon salt

5 tablespoons unsalted butter (softened)

1 egg (for egg wash)

1 tablespoon sesame seeds (optional)


Instructions

1. In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for 5–10 minutes until foamy.

2. In a stand mixer bowl, add the flour, warm milk, eggs, salt, and the yeast mixture. Start mixing on low using the dough hook.

3. Gradually add the softened butter and knead for 8–10 minutes until the dough is smooth and elastic.

4. Place the dough into a greased bowl, cover, and let it rise in a warm spot for 1 to 1.5 hours or until doubled in size.

5. Punch down the dough and divide it evenly (a scale helps!). Shape each piece into a ball and place on a parchment-lined baking sheet.

6. Cover the rolls and let them rise for another 30–40 minutes until puffy.

7. Preheat your oven to 375°F (190°C). Brush the tops with egg wash and sprinkle with sesame seeds if using.

8. Bake for 15–18 minutes until golden brown.

9. Remove from the oven and brush with melted butter for a soft, shiny finish.

10. Serve warm or store in an airtight container once cooled.

Notes

Be sure the milk and water are warm—not hot—to avoid killing the yeast.

Use a kitchen scale to ensure each roll is the same size and bakes evenly.

For a softer crust, cover the rolls with a clean towel immediately after baking.
