Ingredients
8 slices white bread
8 ounces cream cheese softened
1/4 cup powdered sugar for filling
1 teaspoon vanilla extract
1 cup strawberry jam or preserves
4 tablespoons unsalted butter softened for frying
Powdered sugar for dusting optional
Instructions
1. Soften the cream cheese
2. Make the cheesecake filling by mixing cream cheese, powdered sugar, and vanilla
3. Assemble the sandwiches with cream cheese on four slices and jam on four slices
4. Butter the outsides of each sandwich
5. Heat a nonstick skillet over medium heat
6. Fry sandwiches 2-3 minutes per side until golden and heated through
7. Rest 1 minute on a rack to keep bottoms crisp
