Description

Golden, crunchy, and incredibly easy to make—these fried zucchini slices are the ultimate bite-sized snack. Perfect for summer gatherings, game days, or just a flavorful side dish, they’re crispy on the outside and melt-in-your-mouth tender inside.


Ingredients

2 medium zucchini, sliced into 1/4-inch rounds

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (regular, panko, or Italian-style)

1/2 cup grated Parmesan cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

Chopped parsley for garnish (optional)

Oil for frying (vegetable or canola)


Instructions

  1. Wash and dry the zucchini. Slice into 1/4-inch thick rounds.
  2. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mix of breadcrumbs, Parmesan, salt, and pepper.
  3. Dip each zucchini slice into the flour, then the egg, and finally coat with the breadcrumb mixture.
  4. Heat 1/2 inch of oil in a skillet over medium-high heat until hot.
  5. Fry zucchini in batches, 2–3 minutes per side, until golden and crispy.
  6. Transfer to a paper towel-lined plate to drain excess oil.
  7. Serve hot, garnished with parsley and your favorite dipping sauce.
