Instructions
1. Toast the chopped pecans in a dry skillet over medium heat for 4–5 minutes until aromatic. Let cool.
2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until fluffy.
3. Beat in the egg and vanilla extract until combined.
4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients.
5. Fold in the toasted pecans and mix until just combined.
6. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
7. Scoop dough onto the sheet, spacing 2 inches apart.
