Ingredients
1 cup fruit puree (raspberry, strawberry, mango, etc.)
1 1/4 cups granulated sugar
1/2 cup light corn syrup
1/2 cup heavy cream
4 tablespoons unsalted butter
1 tablespoon lemon juice
1/4 teaspoon salt
Instructions
1. Line an 8-inch square baking dish with parchment paper and lightly butter it. Set up your candy thermometer and tools.
2. In a heavy-bottomed saucepan, heat the fruit puree over medium heat for 5 minutes to reduce moisture and deepen flavor.
3. Add the sugar, corn syrup, and lemon juice to the puree. Stir to combine. Clip the thermometer to the pot.
4. Without stirring, bring the mixture to a boil until it reaches 230°F.
5. Slowly pour in the cream and butter while stirring gently. Continue cooking to 240°F (soft-ball stage).
6. Immediately pour the mixture into your prepared dish and let it cool at room temperature for at least 4 hours.
7. Once set, lift the caramel slab out, cut into squares, and wrap in wax paper.

Use a reliable candy thermometer—precision is key to achieving the soft-ball stage.
For extra brightness, a splash of lemon juice balances the sweetness.
Store wrapped caramels in an airtight container at room temperature for up to 2 weeks.
