Ingredients

2 large chicken breasts, cubed

1 tablespoon olive oil

1 tablespoon Cajun seasoning

Salt and pepper, to taste

2 tablespoons butter

3 cloves garlic, minced

10 oz twisted pasta (rotini or spaghetti)

1 teaspoon Cajun seasoning (adjust to taste)

1 ½ cups heavy cream

1 cup grated Parmesan cheese

Salt and pepper, to taste

2 tablespoons chopped parsley (for garnish)

¼ cup reserved pasta water (as needed)


Instructions

1. Cut chicken into bite-size cubes and season with Cajun seasoning, salt, and pepper.

2. Heat olive oil in a nonstick skillet over medium-high heat. Sear chicken for 6–8 minutes until golden and cooked through. Remove and set aside.

3. Reduce heat to medium. Add 2 tablespoons butter to the skillet, then add minced garlic. Cook for 1–2 minutes until fragrant. Add the cooked chicken back to coat in garlic butter.

4. In a large pot of salted boiling water, cook pasta according to package directions. Drain and reserve ¼ cup pasta water.

5. In a separate pan, melt 2 tablespoons butter. Sauté minced garlic and Cajun seasoning for 1 minute. Add heavy cream and whisk in Parmesan cheese until melted and smooth. Season with salt and pepper.

6. Toss in the drained pasta, adding reserved pasta water a bit at a time until sauce reaches desired consistency.

7. Plate the pasta with garlic butter chicken on top or alongside. Garnish with parsley and more Parmesan if desired.

Notes

For extra richness, add a splash of cream when reheating leftovers.

Want more heat? Add red pepper flakes or increase the Cajun seasoning.
