Ingredients

2 large boneless skinless chicken breasts

12 oz penne pasta

4 tablespoons unsalted butter

4 cloves garlic, minced

1/4 cup sun-dried tomatoes, chopped

1 1/2 cups heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated parmesan cheese

1/2 cup shredded fontina cheese

2 tablespoons fresh parsley, chopped

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Season chicken breast cubes with salt and pepper. In a large skillet, melt butter and sear chicken until golden brown and fully cooked. Remove and set aside.

2. In a large pot, boil penne pasta in salted water until al dente. Drain and reserve a small amount of pasta water.

3. In the same skillet used for the chicken, melt additional butter and sauté minced garlic until fragrant. Stir in chopped sun-dried tomatoes.

4. In a medium saucepan, heat heavy cream on low. Gradually whisk in mozzarella, parmesan, and fontina until melted and smooth. Season to taste.

5. Toss drained pasta in the garlic butter mixture. Stir in cheese sauce and reserved chicken. Mix until well combined and coated. Garnish with chopped parsley and serve warm.

Notes

Let the cheese come to room temperature before adding to the cream to help it melt evenly.

Don’t overcook the pasta; it should be firm to the bite to absorb the sauce well.

For extra richness, add a splash of the reserved pasta water to loosen the sauce if it thickens too much.
