Ingredients
4 boneless skinless chicken breasts or thighs
2 tablespoons olive oil
1 teaspoon Italian seasoning

4 tablespoons salted butter
4 garlic cloves minced
1 cup chicken broth (for sauce)
1 cup long grain white rice
2 cups chicken broth (for rice)
¾ cup freshly grated parmesan cheese
1 tablespoon chopped parsley (optional garnish)
Instructions
1. Season chicken with salt, pepper, and Italian seasoning.
2. Heat olive oil in a heavy-bottomed skillet. Sear chicken on both sides until golden brown. Remove and set aside.
3. In the same skillet, reduce heat and melt butter. Add minced garlic and cook until fragrant (1–2 minutes).
4. Deglaze the pan with 1 cup chicken broth. Scrape up any brown bits from the bottom.
5. Return chicken to skillet. Simmer in garlic butter sauce until internal temperature reaches 165°F.
6. In a medium saucepan, cook rice with 2 cups chicken broth until tender.
7. Stir in freshly grated parmesan until creamy.
8. Plate the parmesan rice and top with garlic butter chicken.
9. Spoon over extra sauce and garnish with chopped parsley.
Notes
Use freshly grated parmesan for a creamier rice texture and better flavor.
