Ingredients
1 lb chicken breast, cubed
8 oz linguine
2 tbsp olive oil
3 tbsp butter
4 cloves garlic, minced
1 cup heavy cream
1 cup freshly grated parmesan cheese
Salt and pepper, to taste
2 tbsp chopped parsley (optional)
Instructions
1. Heat olive oil in a skillet over medium-high heat. Add cubed chicken, season with salt and pepper, and sear until golden brown. Remove and set aside.
2. Boil linguine in salted water until al dente. Reserve 1/4 cup pasta water, then drain.
3. In the same skillet, melt butter and add garlic. Cook for 1 minute until fragrant.
4. Pour in heavy cream and bring to a gentle simmer. Slowly whisk in parmesan until sauce is creamy.
5. Add seared chicken and cooked linguine to the skillet. Pour in a splash of reserved pasta water and toss to coat.
6. Serve hot, topped with more parmesan and chopped parsley if desired.

Use freshly grated parmesan for best flavor and smooth sauce.
