Description

Ingredients

1 lb large shrimp, peeled and deveined

1 cup orzo pasta

3 cloves garlic, minced

2 tablespoons butter

1 tablespoon olive oil

2 cups chicken or vegetable broth

1 tablespoon lemon juice

1 teaspoon lemon zest

1/4 teaspoon crushed red pepper flakes (optional)

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper. Add shrimp in a single layer and sear for 2 minutes per side until pink and opaque. Remove and set aside.

2. Lower heat to medium. Add butter and garlic to the same skillet. Sauté for 1–2 minutes until fragrant.

3. Stir in the orzo and toast it for 2 minutes in the garlic butter.

4. Pour in broth, lemon juice, and red pepper flakes (if using). Bring to a simmer and cook for 8–10 minutes, stirring occasionally, until orzo is tender and most of the liquid is absorbed.

5. Return shrimp to the skillet and stir to combine. Let it warm for 1–2 minutes.

6. Garnish with lemon zest and parsley. Taste and adjust seasoning if needed. Serve warm.

Notes

Use low-sodium broth to better control the saltiness.

Don’t overcook the shrimp—they’re done once they turn pink and curl slightly.

Add a splash of broth when reheating to keep the orzo creamy.
