This Garlic Butter Shrimp Scampi Lasagna is a luxurious seafood pasta dish layered with creamy ricotta, garlic butter shrimp, mozzarella, and Parmesan cheese. Perfect for dinner parties or indulgent weeknights, it combines the comfort of lasagna with the bold, buttery flavors of shrimp scampi.
Ingredients
12 lasagna noodles
1 1/2 pounds shrimp, peeled and deveined
6 tablespoons butter
5 garlic cloves, minced
1 cup heavy cream
1 cup ricotta cheese
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
2. Cook lasagna noodles according to package instructions. Drain and set aside.
3. In a large skillet, melt 3 tablespoons butter over medium heat. Add garlic and sauté for 1 minute.
4. Add shrimp and cook for 2–3 minutes until pink and opaque. Remove from heat.
5. In a medium saucepan, melt remaining 3 tablespoons butter. Stir in heavy cream and 1/2 cup Parmesan. Simmer until thickened.
6. Spread a layer of sauce on the bottom of the baking dish. Add noodles, ricotta, shrimp, mozzarella, and sauce.
7. Repeat layers, ending with mozzarella and remaining Parmesan on top.
8. Cover with foil and bake for 25 minutes. Uncover and bake for an additional 10–15 minutes until golden and bubbly.
9. Rest for 10 minutes before slicing. Garnish with chopped parsley and serve.
Notes
Be sure to slightly undercook shrimp as they will continue to cook while baking.
Letting the lasagna rest ensures clean slices and better texture.
Using freshly shredded cheese enhances melt and flavor.
