Ingredients
1 pound spaghetti
1 pound Italian sausage, crumbled
4 cups fresh spinach
4 cloves garlic, minced
4 tablespoons butter
1 cup shredded mozzarella
1/3 cup grated parmesan
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Drain and reserve 1/2 cup pasta water.
2. In a deep skillet, heat olive oil over medium heat. Add sausage and cook until browned, about 6–8 minutes. Remove and set aside.
3. In the same skillet, melt butter. Add minced garlic and sauté for 1–2 minutes until fragrant.
4. Add spinach to the skillet and cook until wilted.
5. Return sausage to the skillet. Add spaghetti and toss everything together. Use reserved pasta water to loosen the sauce if needed.
6. Top with mozzarella and parmesan. Let cheese melt or broil for 2–3 minutes for a golden top.
Notes
For deeper flavor, use a mix of mozzarella and provolone.
If spinach releases too much water, let it cook off before adding pasta.
Broiling the cheese topping adds a restaurant-style finish.
