Description

Ingredients

1 pound sirloin or ribeye steak, cut into bites

4 garlic cloves, minced

3 tablespoons unsalted butter

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

8 ounces shell pasta

1 1/4 cups shredded white cheddar cheese

2 chipotle peppers in adobo, finely chopped

1/2 cup heavy cream

1/2 cup whole milk


Instructions

1. Pat steak dry and cut into bite-sized cubes. Season with salt, pepper, and smoked paprika.

2. Heat cast iron skillet over medium-high heat. Add 1 tablespoon of butter and sear steak bites in batches for 2 minutes per side. Remove and set aside.

3. In the same skillet, lower heat and add remaining butter and minced garlic. Stir until fragrant. Return steak bites and coat with garlic butter.

4. Cook shell pasta in salted water. Drain and set aside.

5. In a saucepan, combine cream, milk, and chopped chipotle peppers. Simmer, then whisk in white cheddar cheese until smooth.

6. Toss drained pasta into chipotle cheese sauce until well coated.

7. Plate steak bites with creamy shells. Garnish as desired and serve hot.

Notes

Let the steak rest after searing to retain juices.

Finely chop chipotle peppers to evenly distribute heat.

Stir cheese sauce continuously to avoid lumps.
