Ingredients

Steak Tips (sirloin or ribeye)

Rigatoni pasta

Butter

Garlic

Parmesan cheese

Mozzarella cheese

Heavy cream

Salt

Black pepper

Fresh parsley (optional)


Instructions

  1. Boil the rigatoni in salted water until al dente. Reserve 1/2 cup of pasta water and drain.
  2. Season steak tips with salt and pepper. Sear in a hot skillet with butter for 2–3 minutes per side. Set aside.
  3. In the same skillet, add more butter and minced garlic. Sauté until fragrant.
  4. Pour in heavy cream and bring to a simmer. Slowly whisk in Parmesan and mozzarella until melted.
  5. Mix in the cooked rigatoni. Add reserved pasta water as needed to thin the sauce.
  6. Fold in the steak tips and heat through. Garnish with parsley and serve.
