Ingredients

4 chicken thighs (bone-in or boneless)

3 cloves garlic (minced)

1 tablespoon fresh thyme (chopped)

1 tablespoon fresh parsley (chopped)

1 teaspoon rosemary (chopped)

2 pounds potatoes (Yukon Gold or Russet)

4 tablespoons butter (divided)

1/2 cup milk or heavy cream

1 pound carrots (baby or sliced)

2 tablespoons brown sugar

1 1/2 teaspoons salt (divided)

1 teaspoon black pepper (divided)

2 tablespoons olive oil


Instructions

1. Pat the chicken thighs dry and season with 1 teaspoon salt, 1/2 teaspoon pepper, garlic, and chopped herbs.

2. Heat olive oil in a cast iron skillet and sear chicken skin-side down until golden and crisp. Flip and sear the other side.

3. Transfer skillet to preheated oven at 375°F and roast chicken for 15-20 minutes until fully cooked (165°F internal temperature).

4. Peel and cube potatoes. Boil in salted water for 15 minutes until fork-tender.

5. Drain potatoes, then mash with 2 tablespoons butter, milk, and remaining salt and pepper until smooth.

6. Toss carrots in 2 tablespoons melted butter, brown sugar, and a pinch of salt and pepper.

7. Roast carrots on a baking sheet at 375°F for 20-25 minutes until tender and lightly caramelized.

8. Plate mashed potatoes, top with chicken and pan juices, and serve with glazed carrots. Garnish with herbs.

Notes

Let chicken rest for 5 minutes before serving to retain juices.

Use room temperature butter and milk for creamier mashed potatoes.

Slice larger carrots evenly to ensure they roast at the same rate.
