Description

Fresh, zesty, and full of texture, this Garlic Lemon Parmesan Kale Salad is a perfect choice for a quick lunch, healthy snack, or light dinner. Packed with nutrient-rich kale, bright lemon juice, savory Parmesan, and crispy breadcrumbs, this easy recipe brings bold flavor with minimal effort.


Ingredients

1 bunch kale

2 tablespoons fresh lemon juice

2 cloves garlic

3 tablespoons olive oil

1/3 cup grated Parmesan cheese

1/2 cup breadcrumbs

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Remove stems from kale and chop leaves into bite-sized pieces. Wash and dry thoroughly.

2. In a bowl, whisk together lemon juice, minced garlic, olive oil, salt, and pepper.

3. Add kale to a large bowl and pour dressing over it. Massage for 2–3 minutes until softened.

4. Heat a skillet with a little olive oil and toast breadcrumbs until golden brown.

5. Toss kale with Parmesan cheese, then top with toasted breadcrumbs. Serve fresh.

Notes

Massage the kale well to reduce bitterness and improve texture.

Add breadcrumbs just before serving to keep them crispy.

For extra protein, top with grilled chicken or chickpeas.
