A rich, toasty sandwich that combines sautéed garlic mushrooms with gooey melted cheese between golden buttered bread slices. Perfectly crisp outside and savory inside, this grilled cheese makes a cozy lunch or an indulgent snack.
Ingredients
Mushrooms (cremini or baby bella)
Garlic, minced
Butter
Cheese (mozzarella, provolone, or gouda)
Thick-sliced sourdough or rustic white bread
Salt and black pepper
Instructions
- Melt 1 tbsp of butter in a skillet over medium heat. Add sliced mushrooms and sauté until browned, about 6-8 minutes.
- Add minced garlic to the mushrooms, season with salt and pepper, and cook for 1-2 more minutes.
- Butter one side of each bread slice. On the unbuttered side, layer cheese, garlic mushrooms, and another layer of cheese.
- Top with the second slice of bread, buttered side facing out.
- Grill the sandwich in a skillet over medium heat for 3-4 minutes per side until the bread is golden and the cheese has melted.
- Let rest for 1 minute before slicing and serving.
