Ingredients
1.5 lbs chicken breasts or tenderloins
3 cloves garlic, minced
½ cup grated Parmesan cheese
2 tablespoons olive oil
1 bunch broccolini
to taste salt
to taste black pepper
2 tablespoons butter
1 cup heavy cream
⅓ cup sun-dried tomatoes, chopped
1 tablespoon Cajun seasoning
1 tablespoon chopped parsley (optional)
Instructions
1. Season the chicken with salt, pepper, minced garlic, and Parmesan.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken bites 3–4 minutes per side until golden and cooked through. Remove from skillet.
3. In the same pan, add more oil if needed and toss in broccolini. Let it char undisturbed for a few minutes, then stir until tender-crisp. Set aside.
4. Reduce heat. Melt butter in the skillet, stir in sun-dried tomatoes, then pour in heavy cream.
5. Add Cajun seasoning and extra Parmesan to the sauce. Let simmer until slightly thickened.
6. Return chicken to the skillet and spoon sauce over it. Let everything warm through.
7. Plate with charred broccolini and garnish with chopped parsley. Serve hot.
Notes
For extra crispy broccolini, make sure the pan is hot before adding it.
Let the Alfredo simmer slowly to thicken naturally without separating.
Use freshly grated Parmesan for the best melt and flavor.
