Ingredients
1 lb chicken breast, diced into bites
1/2 cup Parmesan cheese, grated
3 cloves garlic, minced
1 cup heavy cream
1/3 cup sun-dried tomatoes, chopped
2 tsp Cajun seasoning
2 tbsp butter
1 bunch broccolini
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Season chicken with salt, pepper, and Cajun seasoning. Sear in a cast iron skillet with olive oil until golden and cooked through. Set aside.
2. Toss broccolini with olive oil, salt, and pepper. Roast at 425°F for 15–20 minutes until charred.
3. In a saucepan, melt butter and sauté garlic. Add cream, sun-dried tomatoes, Cajun seasoning, and simmer. Stir in Parmesan.
4. Add chicken to sauce, simmer for 5 minutes. Adjust seasoning if needed.
5. Plate with broccolini, spoon over extra sauce, and garnish with Parmesan.
Notes
Don’t overcrowd the broccolini on the baking sheet to ensure it chars properly.
For a milder version, reduce Cajun seasoning and add extra cream.
Freshly grated Parmesan melts smoother than pre-shredded varieties.
