Description

Garlic Parmesan Crockpot Chicken and Potatoes is the ultimate easy dinner recipe for busy nights. Juicy chicken and baby potatoes simmer in a creamy garlic parmesan sauce—comfort food at its finest! This slow cooker chicken meal is rich, hearty, and full of flavor.


Ingredients

1.5 pounds boneless skinless chicken thighs or breasts

1.5 pounds baby potatoes, halved

4 cloves garlic, minced

1 cup grated parmesan cheese

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

3 tablespoons butter, melted

1 teaspoon salt

0.5 teaspoon black pepper


Instructions

1. Dice baby potatoes into bite-sized chunks and trim the chicken if needed. Mince the garlic.

2. In a bowl, mix together the heavy cream, chicken broth, garlic, melted butter, and parmesan cheese. Stir until combined.

3. Place potatoes in the bottom of the crockpot. Lay seasoned chicken on top. Pour sauce mixture over all.

4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is cooked and potatoes are fork-tender.

5. Gently stir the mixture. Serve hot with extra parmesan or fresh parsley, if desired.

Notes

Use chicken thighs for more flavor and juiciness, but chicken breasts work too.

Stir gently before serving to ensure even sauce coating.

Add spinach or mushrooms in the last hour for a veggie boost.
