Ingredients
2 cups green beans (fresh or frozen)
4 oz cream cheese, softened
1/2 cup sour cream
1/2 cup shredded Parmesan cheese
2 cloves garlic, minced
1 cup French fried onions
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil or melted butter
1 large egg
Instructions
1. Preheat oven to 375°F (190°C) and grease a muffin tin.
2. Blanch fresh green beans for 3–4 minutes, then cool in ice water, drain, and pat dry. If using frozen, thaw and dry well.
3. In a bowl, mix cream cheese, sour cream, Parmesan, garlic, salt, and pepper until smooth.
4. Fold in green beans, then mix in the egg until fully combined.
5. Spoon mixture into muffin tin cups, filling about 3/4 full.
6. Top with French fried onions, pressing lightly.
7. Bake for 18–22 minutes until golden and set.
8. Cool for 5–10 minutes before removing and serving.
