Ingredients
1 lb steak (sirloin or ribeye), cut into cubes
9 oz cheese-filled tortellini
3 garlic cloves, minced
1 cup heavy cream
½ cup grated Parmesan cheese
2 tbsp butter
1 tbsp olive oil
2 tbsp chopped fresh parsley or chives
Salt, to taste
Black pepper, to taste
¼ tsp red pepper flakes (optional)
Instructions
1. Season steak cubes with salt and pepper.
2. Heat cast iron skillet over medium-high heat with olive oil and 1 tbsp butter.
3. Sear steak in batches, 2–3 minutes per side. Remove and set aside.
4. Boil tortellini in salted water according to package instructions. Drain and set aside.
5. In the same skillet, reduce heat to medium and add 1 tbsp butter.
6. Sauté minced garlic until fragrant, about 30 seconds.
7. Pour in heavy cream, stirring constantly. Simmer for 3–4 minutes.
8. Stir in Parmesan cheese and red pepper flakes. Simmer until sauce thickens.
9. Adjust seasoning with salt and black pepper.
10. Add cooked tortellini and stir to coat in the sauce.
11. Return steak to skillet and stir gently to combine.
12. Sprinkle with fresh parsley or chives and serve immediately.
Notes
For best sear, don’t overcrowd the skillet when cooking steak—work in batches.
To thicken the sauce more, let it simmer uncovered an extra 2–3 minutes.
Add a splash of milk or cream when reheating to revive the sauce’s creaminess.
