Ingredients
12 oz spaghetti
2 chicken breasts
1 pint cherry tomatoes
1 cup heavy cream
6 cloves garlic, minced
1/2 cup grated parmesan cheese
2 tablespoons olive oil
2 tablespoons butter
Salt and pepper to taste
1/4 teaspoon paprika
2 tablespoons fresh chopped parsley
Instructions
1. Season chicken breasts with salt, pepper, and paprika.
2. Heat olive oil in a large skillet over medium-high. Sear chicken until golden and cooked through. Remove and let rest.
3. In the same skillet, add butter and cherry tomatoes. Cook until they blister and soften, about 5-7 minutes.
4. Reduce heat to medium-low. Add garlic and sauté for 1 minute until fragrant.
5. Pour in heavy cream and parmesan, whisking until smooth and creamy.
6. Cook spaghetti in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
7. Add cooked pasta to the sauce along with reserved water. Toss to coat.
8. Slice the cooked chicken and return to the skillet.
9. Sprinkle with chopped parsley and serve warm with extra parmesan.
Notes
Use freshly grated parmesan for the best texture and melt.
Do not overcook the garlic—gentle heat prevents bitterness.
