Ingredients
1 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
24 soft caramel squares
1 1/2 cups chocolate chunks or chips
Flaky sea salt, for topping
Instructions
1. In a large mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
2. Beat in the eggs one at a time, then add the vanilla extract.
3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients until just combined.
4. Fold in the chocolate chunks or chips evenly throughout the dough.
5. Scoop dough using a cookie scoop. Flatten slightly, insert a caramel in the center, and roll into a ball.
6. Chill the dough balls for 30 minutes. Meanwhile, preheat the oven to 350°F (175°C).
7. Place cookies on a parchment-lined baking sheet and bake for 10–12 minutes, or until edges are golden and centers are just set.
8. Immediately sprinkle with flaky sea salt and let cool on a wire rack before serving.
Notes
For best results, underbake slightly so the caramel remains soft inside.
