Ingredients

For the Chicken:

2 boneless, skinless chicken breasts

1/2 cup all-purpose flour

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and black pepper to taste

1 large egg

2 tablespoons milk

3/4 cup breadcrumbs (panko recommended)

1/2 cup grated parmesan cheese

3 tablespoons olive oil or butter (for frying)

For the Parmesan Mushroom Sauce:

1 tablespoon butter

1 tablespoon olive oil

8 oz mushrooms, sliced (button or cremini)

2 cloves garlic, minced

1/2 cup chicken broth

1/2 cup heavy cream

1/2 teaspoon dried thyme

1/2 cup grated parmesan cheese

Salt and pepper to taste

Fresh parsley for garnish


Instructions

  1. Prepare the Chicken: Flatten chicken breasts to an even thickness. Coat in seasoned flour, then dip in egg mixture, and finally coat with a parmesan breadcrumb mixture.
  2. Cook the Chicken: Heat oil or butter in a skillet over medium heat. Cook chicken for 4–5 minutes per side until golden brown and cooked through. Transfer to a plate and keep warm.
  3. Make the Sauce: In the same skillet, heat butter and olive oil. Sauté mushrooms until tender. Add garlic and cook briefly. Pour in chicken broth and simmer for 2 minutes. Add heavy cream, thyme, and parmesan, stirring until smooth. Season with salt and pepper.
  4. Assemble & Serve: Return chicken to the skillet, spoon sauce over the top, and let it simmer briefly. Garnish with fresh parsley and serve hot.
