Ingredients
1 ½ pounds boneless skinless chicken breasts
1 cup plain Greek yogurt
2 tablespoons fresh lemon juice
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon salt
½ teaspoon black pepper
Fresh parsley, chopped (optional garnish)
Instructions
1. In a mixing bowl, whisk together the Greek yogurt, lemon juice, olive oil, minced garlic, oregano, salt, and black pepper until smooth.
2. Add the chicken breasts to a zip-top bag or shallow glass container. Pour the marinade over the chicken and coat well. Seal and refrigerate for at least 1 hour, or up to 8 hours.
3. Preheat the oven to 400°F (200°C), or preheat grill to medium-high heat.
4. Lightly oil a baking dish or grill grates. Remove chicken from marinade and let excess drip off.
5. Place chicken on baking dish or grill. Cook for 20–25 minutes in the oven or 6–7 minutes per side on the grill, until internal temperature reaches 165°F (74°C).
6. Let rest for 5 minutes before slicing. Garnish with fresh parsley and lemon slices, if desired. Serve hot.
Notes
For best flavor, marinate the chicken for at least 1 hour—longer means juicier results.
Always use a meat thermometer to ensure the chicken is safely cooked without drying out.
This recipe works just as well with boneless chicken thighs—just adjust the cook time slightly.
