Ingredients
1 lb ribeye or sirloin steak
1 cup cherry tomatoes
8 oz fresh mozzarella balls (bocconcini)
1/2 cup fresh basil leaves
1/3 cup balsamic vinegar
2 tbsp olive oil
Salt and pepper to taste
Instructions
1. Season both sides of the steak with salt and pepper.
2. Heat a cast iron skillet over medium-high heat and add 1 tbsp of olive oil. Sear the steak for 4–5 minutes per side. Let it rest for 5–10 minutes before slicing.
3. In the same skillet, add the cherry tomatoes with the remaining olive oil. Cook until they blister and soften.
4. In a small saucepan, simmer balsamic vinegar over medium heat until it reduces by half and becomes syrupy.
5. Slice the steak and arrange it on a platter. Top with roasted tomatoes and mozzarella balls.
6. Add fresh basil leaves on top.
7. Drizzle balsamic glaze over everything and serve immediately.
