Ingredients
2 large chicken breasts
3 tablespoons olive oil
2 tablespoons lemon juice

2 cups rotini pasta, cooked
1 cup cucumber, sliced
1 cup cherry tomatoes, halved
1/3 cup kalamata olives
1/4 cup feta cheese (optional)
1/2 cup tzatziki sauce
2 tablespoons fresh parsley, chopped
Instructions
1. Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Marinate chicken in this mix for 30 minutes in the fridge.
2. Boil rotini pasta according to the package instructions. Drain and let cool.
3. Grill marinated chicken over medium-high heat for 6–7 minutes per side until fully cooked. Let it rest, then slice.
4. Slice cucumbers, halve cherry tomatoes, and chop fresh parsley. Set aside olives and feta.
5. In a large salad bowl, layer pasta, vegetables, grilled chicken, olives, and feta. Drizzle with tzatziki sauce.
