Ingredients
120g grilled chicken breast
1 handful fresh spinach
60g roasted red peppers
2 slices mozzarella or provolone cheese
1 tablespoon pesto sauce
2 slices ciabatta or sourdough bread
1 tablespoon butter or olive oil
Instructions
1. Slice grilled chicken into strips, drain the roasted peppers, and wash spinach. Set all ingredients within easy reach.
2. Spread pesto sauce on one slice of bread. Layer with grilled chicken, roasted red peppers, fresh spinach, and cheese. Top with the second bread slice.
3. Lightly brush the outer sides of the bread with butter or olive oil for crispiness.
