Ingredients
1 lb shrimp, peeled and deveined
2 avocados, sliced
1 cup grilled corn kernels
1/2 red onion, diced
1 cup cherry tomatoes, halved
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
1/2 cup Greek yogurt or sour cream
1 teaspoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon cumin
2 tablespoons olive oil
Salt and pepper to taste
Instructions
1. Toss shrimp with olive oil, chili powder, smoked paprika, cumin, salt, and pepper.
2. Grill the shrimp on a hot grill pan or outdoor grill for 2–3 minutes per side until charred and opaque.
3. In a mixing bowl, combine corn, red onion, cherry tomatoes, cilantro, and lime juice to make the salsa.
4. In a blender, mix Greek yogurt or sour cream with lime juice, chili powder, olive oil, and cilantro until creamy.
5. To assemble, lay a base of greens or grains (optional), top with salsa, avocado, grilled shrimp, and drizzle with creamy sauce. Garnish and serve.
Notes
Make sure shrimp is dry before grilling to get the best char.
For extra flavor, marinate shrimp for 15 minutes in the spice mix before cooking.
