Ingredients

1 lb lean ground beef

5 medium Russet or Yukon Gold potatoes, peeled and thinly sliced

1 small onion, diced

2 cups shredded sharp cheddar cheese

1 can (10.5 oz) cream of mushroom soup

1/2 cup milk

Salt and pepper, to taste

Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown the ground beef with diced onion until fully cooked. Season with salt and pepper. Drain excess fat.
  3. In a bowl, stir together the cream of mushroom soup and milk until smooth.
  4. Layer the casserole: Start with a layer of sliced potatoes, followed by beef and onion, a pour of the soup mixture, and a sprinkle of cheese. Repeat until all ingredients are used, finishing with a layer of cheese.
  5. Cover with foil and bake for 1 hour. Remove foil and bake an additional 15-20 minutes until bubbly and golden.
