Ingredients
1 ¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 ½ teaspoons cinnamon
½ teaspoon nutmeg
¼ teaspoon ground cloves
2 large eggs
½ cup brown sugar, packed
¼ cup granulated sugar
½ cup vegetable oil
1 teaspoon vanilla extract
1 ½ cups grated apples (about 2 medium apples)
½ cup chopped pecans (optional)
Instructions
1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
3. In another bowl, whisk eggs, brown sugar, granulated sugar, oil, and vanilla until smooth.
4. Stir in grated apples until fully combined.
5. Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined.
6. Fold in chopped pecans if using.
7. Pour the batter into the prepared loaf pan and smooth the top.
8. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
