Ingredients
1.5 pounds boneless skinless chicken thighs or breasts
2 cups pineapple chunks (fresh or canned, drained)
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1/3 cup soy sauce
2 tablespoons honey or brown sugar
2 cloves garlic, minced
1 teaspoon fresh or ground ginger
2 tablespoons rice vinegar or apple cider vinegar
1 tablespoon olive oil
1 teaspoon cornstarch (optional, for glaze thickening)
salt and pepper to taste
Instructions
1. In a medium bowl, whisk together soy sauce, honey or brown sugar, garlic, ginger, vinegar, and olive oil to make the marinade.
2. Cut chicken into bite-sized pieces and place in a bowl. Pour half of the marinade over the chicken, toss well, and let sit for at least 15 minutes.
3. While the chicken marinates, chop the bell peppers and pineapple into even pieces. Toss with a bit of olive oil, salt, and pepper.
4. Line a large sheet pan with foil or parchment. Spread chicken on the pan, then scatter the peppers and pineapple around evenly.
5. Roast at 400°F (200°C) for 20–25 minutes until chicken is cooked through and slightly caramelized. Broil for 2–3 minutes for more browning if desired.
6. To make extra glaze, simmer remaining marinade in a saucepan. Add a cornstarch slurry (1 tsp cornstarch + 1 tbsp water), and cook until thickened. Drizzle over roasted chicken before serving.
Notes
For the juiciest results, use chicken thighs — they retain moisture better during roasting.
To avoid sogginess, dry the pineapple chunks if using canned or frozen.
