Ingredients
1 cup butterscotch chips
1 cup creamy peanut butter
4 cups crispy chow mein noodles (uncooked)
0.5 cup salted peanuts (optional)
0.5 cup mini marshmallows (optional)
Instructions
1. In a medium saucepan over low heat (or microwave in 30-second bursts), melt the butterscotch chips and peanut butter together. Stir constantly until smooth and fully combined. Be careful not to overheat.
2. In a large mixing bowl, add the crispy chow mein noodles.
3. Pour the melted mixture over the noodles and gently fold using a rubber spatula until the noodles are evenly coated.
4. Use a spoon or cookie scoop to drop mounds of the mixture onto a parchment-lined baking sheet. Each haystack should be about 2 tablespoons in size.
5. Allow the cookies to set at room temperature for 30–45 minutes, or refrigerate for 15–20 minutes for faster results.
6. Once firm, transfer to an airtight container or serve immediately.
