This healthy no-sugar watermelon sorbet is a quick frozen dessert that tastes light, fruity, and extra refreshing on hot days. Ingredients
6 cups frozen watermelon cubes
2 tablespoons fresh lime juice
4 fresh mint leaves
1 pinch sea salt
Instructions
1. Cut seedless watermelon into small cubes and spread them on a lined tray.
2. Freeze the watermelon cubes for at least 4 hours, or until fully solid.
3. Add the frozen watermelon, lime juice, mint leaves, and sea salt to a high-speed blender or food processor.
4. Pulse a few times, then blend until the mixture turns smooth and thick.
5. Scrape down the sides as needed so all the fruit blends evenly.
6. Serve immediately for a soft sorbet texture, or freeze for 1 to 2 more hours for firmer scoops.
7. Scoop into bowls and garnish with extra mint if desired.
Notes
Use very ripe watermelon for the sweetest flavor since there is no added sugar.
Let the sorbet sit at room temperature for 5 to 10 minutes before scooping if frozen solid.
A food processor works well if your blender has trouble with frozen fruit.
