3 cloves garlic, minced
1 bell pepper (red, yellow, or green), chopped
1 zucchini, diced
1 can (14.5 oz) diced tomatoes
4 cups chicken broth
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon crushed red pepper flakes (optional)
2 cups fresh kale or spinach, chopped
Salt and black pepper to taste
1 tablespoon olive oil
Instructions
- Sauté the Sausage: Heat olive oil in a large pot over medium heat. Add the Italian sausage, breaking it into pieces, and cook until browned. Drain excess grease if necessary.
- Cook the Aromatics: Add the diced onion and minced garlic to the pot. Sauté for 2 minutes until fragrant.
