Description

This Hearty Slow Cooker Cowboy Beans recipe is the ultimate comfort food packed with ground beef, a trio of beans, sweet barbecue sauce, and bold seasonings. Ingredients

1 pound ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) pinto beans, drained and rinsed

1 can (15 oz) butter beans, drained and rinsed

1 can (14.5 oz) diced tomatoes, with juices

1 cup barbecue sauce

1/4 cup brown sugar

1 small yellow onion, chopped

2 cloves garlic, minced

1 tablespoon yellow mustard

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. In a large skillet over medium heat, brown the ground beef until no longer pink. Break it up with a spatula as it cooks. Drain excess grease.

2. Add chopped onion and minced garlic to the beef. Cook for 2–3 minutes until onion is translucent.

3. Transfer the beef mixture to a slow cooker. Add all drained beans, diced tomatoes with juices, barbecue sauce, mustard, and brown sugar.

4. Season with salt and pepper to taste. Stir well to combine.

5. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.

6. Stir once more before serving. Garnish with parsley or cheddar if desired.

Notes

Let the beans rest 10–15 minutes after cooking for a thicker consistency.

For a smoky depth, add 4 slices of cooked crumbled bacon.

Use spicy BBQ sauce or add jalapeños for heat.
