Description

This Heavenly Chicken Mushroom Pasta is a creamy, savory, and utterly satisfying dish that combines golden-seared chicken, sautéed mushrooms, and a rich parmesan garlic sauce over rotini pasta. Perfect for weeknights or weekend comfort meals, it delivers both elegance and ease on a single plate.


Ingredients

2 boneless skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

2 tablespoons butter

2 cups sliced cremini or baby bella mushrooms

3 garlic cloves, minced

1 1/2 cups heavy cream

3/4 cup grated Parmesan cheese

12 oz rotini pasta

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Season the Chicken: Season chicken pieces with salt, pepper, and Italian seasoning.
  2. Sear the Chicken: Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Cook chicken until golden and cooked through. Remove and set aside.
  3. Cook Mushrooms: In the same skillet, add remaining butter and sauté mushrooms until tender. Add garlic and cook for 1 minute.
  4. Make the Sauce: Reduce heat to medium. Pour in the cream, stir, then add Parmesan. Let it simmer and thicken.
  5. Boil Pasta: Cook rotini according to package directions. Drain well.
  6. Combine: Return chicken to skillet and add cooked pasta. Toss to coat in sauce.
  7. Garnish & Serve: Sprinkle with parsley and more Parmesan if desired.
