Ingredients
2 boneless skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
2 tablespoons butter
2 cups sliced cremini or baby bella mushrooms
3 garlic cloves, minced
1 1/2 cups heavy cream
3/4 cup grated Parmesan cheese
12 oz rotini pasta
1 teaspoon Italian seasoning
Salt and pepper to taste
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Season the Chicken: Season chicken pieces with salt, pepper, and Italian seasoning.
- Sear the Chicken: Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Cook chicken until golden and cooked through. Remove and set aside.
- Cook Mushrooms: In the same skillet, add remaining butter and sauté mushrooms until tender. Add garlic and cook for 1 minute.
- Make the Sauce: Reduce heat to medium. Pour in the cream, stir, then add Parmesan. Let it simmer and thicken.
- Boil Pasta: Cook rotini according to package directions. Drain well.
- Combine: Return chicken to skillet and add cooked pasta. Toss to coat in sauce.
- Garnish & Serve: Sprinkle with parsley and more Parmesan if desired.
