Ingredients
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/4 tsp ground black pepper
1 cup milk
2 large eggs
1/4 cup olive oil or melted butter
1 1/2 cups shredded cheese (cheddar, mozzarella, or mix)
1/4 cup chopped fresh herbs (parsley, rosemary, thyme)
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, baking powder, salt, and pepper.
- In another bowl, beat eggs with milk and olive oil or melted butter.
- Stir wet mixture into the dry ingredients until just combined.
- Fold in shredded cheese and chopped herbs evenly.
- Pour batter into the prepared pan and smooth the top.
- Bake for 45–50 minutes, until golden and a toothpick comes out clean.
- Cool in pan 10 minutes, then transfer to a rack. Slice and enjoy warm or cooled.
