Description

Ingredients

2 cups all-purpose flour

1 tbsp baking powder

1/2 tsp salt

1/4 tsp ground black pepper

1 cup milk

2 large eggs

1/4 cup olive oil or melted butter

1 1/2 cups shredded cheese (cheddar, mozzarella, or mix)

1/4 cup chopped fresh herbs (parsley, rosemary, thyme)


Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, salt, and pepper.
  3. In another bowl, beat eggs with milk and olive oil or melted butter.
  4. Stir wet mixture into the dry ingredients until just combined.
  5. Fold in shredded cheese and chopped herbs evenly.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 45–50 minutes, until golden and a toothpick comes out clean.
  8. Cool in pan 10 minutes, then transfer to a rack. Slice and enjoy warm or cooled.
