Description

Ingredients

1.5 pounds chicken breast or thighs, boneless and skinless

2 tablespoons olive oil

2 tablespoons butter

2 teaspoons fresh thyme, chopped

2 teaspoons fresh parsley, chopped

1 teaspoon fresh oregano, chopped

3 cloves garlic, minced

1.5 cups heavy cream

0.75 cup crumbled feta cheese

1 tablespoon truffle oil

0.5 cup grated parmesan cheese (for sauce)

1 large leek, thinly sliced

0.5 cup grated parmesan cheese (for leeks)

Salt and pepper, to taste

1 teaspoon lemon zest (optional)


Instructions

1. Cut chicken into bite-sized pieces. Season with salt, pepper, thyme, parsley, and oregano. Let rest for 10 minutes.

2. Heat olive oil and butter in a large skillet. Sear chicken until golden and cooked through. Remove and set aside.

3. Preheat oven to 400°F. Toss sliced leeks with olive oil and grated parmesan. Spread on parchment-lined baking sheet and bake until crispy.

4. In the skillet, add minced garlic and cook until fragrant. Pour in cream, stir in feta, and whisk until melted. Add truffle oil and parmesan, stirring until the sauce thickens.

5. Return chicken to skillet, coating in sauce. Warm through. Top with crispy leeks and lemon zest. Serve hot over pasta, potatoes, or vegetables.

Notes

For best results, don’t skip resting the chicken after seasoning—it absorbs the herbs better.

Add pasta cooking water (1–2 tbsp) to the sauce if it becomes too thick when reheating.

For extra crisp leeks, use convection bake or air fryer at 375°F.
