  • Author: Kate Walton

  • Yield: 8 slices

Description

A Southern classic born from simplicity, Hillbilly Pie (also known as Poor Man’s Pie) brings comforting, custard-like sweetness with pantry staple ingredients. A golden crust with a creamy, caramelized filling makes this humble pie a timeless treat for any occasion.

Ingredients

Granulated Sugar

All-Purpose Flour

Whole Milk

Vanilla Extract

Unsalted Butter (melted)

Unbaked Pie Crust

Ground Nutmeg (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and place the unbaked pie crust into a 9-inch pie pan. Blind bake for 8-10 minutes for a crispier base, then cool.
  2. In a bowl, mix sugar and flour until evenly combined.
  3. Add milk and vanilla to the dry mixture and stir until smooth.
  4. Stir in melted butter, and a pinch of nutmeg if using.
  5. Pour mixture into the pie shell carefully near the oven to avoid spills.
  6. Bake for 45-55 minutes until the center is mostly set and the top is golden.
  7. Cool to room temperature, then chill in the refrigerator for at least 2 hours before slicing.
