Ingredients

1 lb ground beef

1 lb baby potatoes diced

6 slices bacon chopped

1 cup shredded cheddar cheese

1/2 cup heavy cream

1/2 cup carrots diced

1/2 cup celery diced

1 small onion diced

3 cloves garlic minced

4 cups chicken or beef broth

2 tbsp butter

2 tbsp flour

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

1/4 cup green onions chopped


Instructions

1. Cook chopped bacon until crispy and set aside

2. Brown ground beef in the same pot and drain excess fat

3. Add butter onion carrots celery and garlic then sauté until soft

4. Stir in potatoes and broth then simmer until tender

5. Mix flour with broth to create slurry and stir into soup

6. Add heavy cream and cheddar cheese and mix until smooth

7. Season and top with bacon and green onions before serving

Notes

Use freshly shredded cheese for best melting

Do not overcook potatoes to avoid mushy texture

Add broth when reheating to maintain creamy consistency
