Description
A warm and comforting noodle soup layered with savory broth, tender chicken, crisp bok choy, and topped with a jammy soft-boiled egg. This Homemade Chicken Ramen Soup is a weeknight favorite and easy to make with pantry ingredients.
Ingredients
2 chicken breasts or thighs
4 cups chicken broth
2 packs ramen noodles (instant or fresh)
2 tablespoons soy sauce
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon sesame oil
2 eggs
2 heads baby bok choy, halved
2 green onions, chopped
1 teaspoon sesame seeds (optional)
Instructions
- Boil the eggs for 6-7 minutes, transfer to an ice bath, peel, and set aside.
 - Simmer chicken in salted water or broth for 15 minutes until cooked through. Shred and reserve.
 - In a new pot, sauté garlic and ginger in sesame oil for 1-2 minutes.
 - Add chicken broth and soy sauce; bring to a simmer for 5 minutes.
 - Add bok choy and simmer for 2-3 minutes until just tender.
 - Cook ramen noodles separately according to package instructions. Drain.
 - Assemble bowls with noodles, ladle in broth and bok choy, top with shredded chicken, egg halves, green onions, and sesame seeds.
