Ingredients

1 lb ground beef

4 cups potatoes, peeled and diced

1 cup carrots, diced

1 small onion, chopped

3 cloves garlic, minced

4 cups beef broth

1 cup milk or heavy cream

3 tbsp butter

3 tbsp flour

1 tsp salt

1/2 tsp black pepper

2 tbsp fresh parsley, chopped


Instructions

1. Heat a large pot over medium heat and cook the ground beef until browned, breaking it apart as it cooks. Drain excess grease.

2. Add butter to the pot, then sauté the chopped onion and garlic until soft and fragrant.

3. Stir in the diced potatoes and carrots, cooking for a few minutes to build flavor.

4. Pour in the beef broth and bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender.

5. In a bowl, whisk together the flour and milk (or cream) until smooth, then slowly add it to the soup while stirring.

6. Season with salt and pepper, simmer until thickened, then garnish with fresh parsley and serve warm.

Notes

For a thicker soup, mash some of the potatoes directly in the pot.

Add extra vegetables like corn or celery for more texture and flavor.

Use heavy cream instead of milk for a richer, more indulgent result.
