Ingredients
1.5 lbs boneless chicken thighs or breasts, cut into pieces
1/4 cup honey
1/4 cup soy sauce
3 garlic cloves, minced
2 tablespoons olive oil
1 tablespoon lemon juice or vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley or cilantro (optional)
Instructions
1. In a mixing bowl, whisk together honey, soy sauce, garlic, olive oil, lemon juice, salt, and pepper.
2. Add chicken pieces and toss to coat. Cover and marinate in the fridge for at least 30 minutes or up to overnight.
3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
4. Thread the marinated chicken onto skewers, spacing pieces slightly apart.
5. Preheat grill or grill pan over medium-high heat. Lightly oil the grates.
6. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and lightly charred.
7. Optionally brush with extra marinade in the final minute of grilling.
8. Sprinkle with chopped herbs before serving.
Notes
Marinate overnight for maximum flavor and tenderness.
Don’t overcrowd the skewers to ensure even cooking and caramelization.
Use a meat thermometer to confirm internal temperature reaches 165°F.
