Description

These crispy Honey Mustard Potatoes are roasted to golden perfection with a sweet and tangy glaze of honey, Dijon mustard, and herbs. Ingredients

1.5 pounds baby potatoes

2 tablespoons olive oil

2 tablespoons honey

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 teaspoon dried herbs (thyme, rosemary, or oregano)

½ teaspoon salt

¼ teaspoon black pepper


Instructions

1. Wash and dry the baby potatoes. Cut them in half for quicker and even roasting.

2. In a large bowl, whisk together olive oil, honey, Dijon mustard, garlic, herbs, salt, and pepper until combined.

3. Add the potatoes to the bowl and toss well to coat evenly.

4. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

5. Spread potatoes on the baking sheet cut-side down in a single layer.

6. Roast for 35-40 minutes, flipping once halfway, until crispy and golden brown.

7. Let cool slightly before serving. Garnish with fresh herbs if desired.

Notes

Dry potatoes thoroughly before tossing in glaze to help them crisp up.

For extra tang, add a splash of apple cider vinegar to the glaze.

Don’t overcrowd the pan; space them out to roast instead of steam.
