Ingredients
1 lb chicken breast, cut into chunks
8 oz rotini pasta
1 cup heavy cream
1/2 cup crumbled feta cheese
1/4 cup fresh basil leaves
2 tbsp hot honey
1 tbsp Cajun seasoning
1 cup Brussels sprout leaves
2 tbsp olive oil
1 garlic clove
1/2 tsp salt
Instructions
1. Toss chicken chunks with olive oil and Cajun seasoning until coated.
2. Heat skillet over medium-high heat and sear chicken until golden and slightly charred.
3. Drizzle hot honey over chicken during the last 2 minutes and stir to coat.
4. Cook pasta in salted water until al dente; reserve 1/2 cup pasta water, then drain.
5. Blend heavy cream, feta, basil, garlic, and salt until smooth.
6. Heat the blended sauce in a saucepan until warmed through and thickened slightly.
7. Toss Brussels sprout leaves with olive oil and salt; roast at 375°F for 10-12 minutes until crispy.
